What Is the Swiss Water® Process?
Developed in Switzerland in the 1930s, the Swiss Water® Process revolutionized decaffeination by eliminating the need for chemical solvents. Instead, it relies on nothing more than pure water, temperature, time, and filtration to gently remove caffeine while maintaining the coffee’s natural flavor profile.
Today, it remains the gold standard among specialty coffee roasters who refuse to sacrifice taste for process.
The Process, Simplified:
1. Extraction
Green coffee beans are immersed in hot water, allowing caffeine and soluble flavor compounds to dissolve.
2. Filtration
The water — now called Green Coffee Extract (GCE) — passes through a specialized carbon filter that removes caffeine molecules while preserving the flavor compounds.
3. Flavor Preservation
A new batch of green coffee beans is introduced to the caffeine-free Green Coffee Extract. Because the extract is already saturated with flavor compounds, only the caffeine is drawn out of the beans — not their character.
4. Drying & Roasting
The decaffeinated beans are gently dried and then roasted to the same Wildwood Mountain standards as our fully caffeinated offerings.
The result? A decaf that is remarkably true to its origin — rich, complex, and beautifully balanced.
