Notes of citrus, berries, florals, nuts, and spice are naturally developed long before roasting begins.

Each roast level reveals a different dimension of the bean — highlighting its origin or layering in deeper caramelization and body. The lighter the roast, the more the bean’s natural terroir shines through. The darker the roast, the more bold, developed flavors emerge.

Blonde Roast
While the term “Blonde Roast” gained widespread recognition through large commercial brands, the roast style itself has existed far longer. Historically referred to as Cinnamon Roast, the name evolved as consumers sought clarity between flavor descriptors and roast color.
At its core, Blonde Roast represents one of the lightest expressions of roasted coffee — though its exact shade may vary by roaster. In specialty coffee, the emphasis is less on the label and more on how gently the bean is developed to preserve its natural character.
Because of its shorter roast time, Blonde Roast retains higher perceived acidity — often described as brightness. This lively quality can present as:
- Citrus or lemon notes
- Light fruit tones
- Toasted grain
- Subtle sweetness
- Floral or tea-like nuances
Some may interpret this brightness as sharpness, while others appreciate its refreshing clarity. When carefully roasted, Blonde Roast reveals the intricate fruit characteristics developed within the coffee cherry itself.
Food journalist Oliver Strand once described light roast coffees as “naked” — a fitting analogy. With minimal roast influence, the bean’s true identity shines through, unmasked by caramelization or smoky undertones.
Light Roast
Light brown in color and roasted for a shorter duration, this profile preserves the bean’s natural character and complexity. Expect vibrant acidity and pronounced origin notes — citrus, florals, berries, or delicate fruit tones depending on the region.
Light roasts retain slightly higher caffeine levels and are ideal for those who appreciate clarity, brightness, and nuance in the cup.
Medium Light Roast
Roasted just beyond light, this profile offers a harmonious balance between brightness and development. Natural flavors remain present, while gentle caramelization introduces subtle notes of brown sugar, toasted nuts, and light spice.
Acidity is lively yet refined, creating a layered and complex cup.
Medium Roast
Our most universally enjoyed profile. Medium roasts offer balance, body, and approachability. The natural origin notes begin to soften as caramel and chocolate tones develop.
Expect smoothness, rounded sweetness, and a full-bodied finish — versatile for both brewed coffee and specialty drinks.
Medium Dark Roast
Rich and deeper in color, this roast begins to draw natural oils to the surface, adding texture and intensity. Origin characteristics take a back seat as bittersweet chocolate, roasted nuts, and subtle smoky notes emerge.
Caffeine content decreases slightly as roasting progresses. This profile delivers boldness without overwhelming bitterness.
Dark Roast
Deep brown to nearly black, dark roasts are defined by their intensity and robust character. Acidity is minimal, while notes of dark cocoa, black tea, smoke, and toasted sugar take center stage.
These beans produce a bold, commanding cup and are especially well-suited for espresso-based drinks such as lattes and cappuccinos.
